Drying of freshly harvested cacao beans at Delft in the Montserrat Hills

A delectable chocolate morsel made with the tonka spice courtesy of Cocobel Chocolates of Trinidad. The spice is derived from the tonka bean which, when dried, produces a chic spice with hints of vanilla, clove, almond and cinnamon that is perfect for desserts and perfumes. It’s currently banned in the US due to the potential toxic levels from the coumarin oil in the bean. But fear not, it can easily be found in other parts of the world…feast your eyes.
